  • 1 lb boneless, skinless chicken breast
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper, to taste
  • 1½ cups long-grain white rice, uncooked
  • 1 can (10 oz) Rotel diced tomatoes with green chilies, undrained
  • 2¼ cups chicken broth
  • 1 cup nacho cheese sauce
  • 1½ cups shredded cheddar or Mexican blend cheese

Instructions

  1. In a large pot, heat olive oil over medium heat. Add chicken, garlic powder, onion powder, chili powder, cumin, salt, and pepper. Sauté for 5–6 minutes until chicken is mostly cooked.
  2. Stir in the uncooked rice and Rotel (juices included). Cook for 1–2 minutes to toast the rice.
  3. Pour in chicken broth and bring to a boil. Reduce heat to low, cover, and simmer for 20–25 minutes until rice is tender.
  4. Stir in nacho cheese sauce and one cup of shredded cheese until melted and creamy.
  5. Top with remaining cheese, cover for 5 minutes to melt, then garnish as desired before serving.
