Ingredients

Scale
  • 1 tablespoon olive oil
  • 14 oz turkey sausage, sliced into ¼-inch rounds
  • 2 cloves garlic, minced
  • 3 cups elbow macaroni
  • 3½ cups chicken broth
  • 1 cup whole milk
  • 1 teaspoon smoked paprika
  • ½ teaspoon black pepper
  • ½ teaspoon salt (adjust to taste)
  • 2 cups shredded sharp cheddar cheese
  • ½ cup shredded mozzarella cheese
  • 2 tablespoons unsalted butter

Instructions

  1. Heat olive oil in a large pot over medium heat. Add sliced turkey sausage and cook until lightly browned (4-5 minutes). Remove and set aside.
  2. In the same pot, sauté minced garlic for about 30 seconds until fragrant.
  3. Add elbow macaroni, chicken broth, whole milk, smoked paprika, black pepper, and salt. Bring to a gentle boil, then reduce heat and simmer for about 8-10 minutes until pasta is tender.
  4. Lower the heat again and stir in cheddar cheese, mozzarella cheese, and unsalted butter until melted and creamy.
  5. Return the browned turkey sausage to the pot, mix well to combine, and heat through for an additional minute or two.
  6. Serve hot garnished with fresh parsley or green onions if desired.
