  • 1 small yellow onion, diced
  • 1 cup sliced carrots
  • 1 cup sliced celery
  • 6 cloves garlic, minced
  • 3 tablespoons flour
  • 4 cups chicken broth
  • 2 cups shredded rotisserie chicken
  • 2 cups heavy cream
  • 16.3 oz. refrigerated biscuit dough

Instructions

  1. Melt butter in a large pot over medium-high heat.
  2. Sauté diced onion, carrots, and celery for about eight minutes until soft.
  3. Cut biscuit dough into pieces; toss lightly in flour.
  4. Add garlic and herbs; cook for one minute until fragrant.
  5. Sprinkle in flour and mix well; cook for another minute.
  6. Pour in chicken broth to deglaze the pot, scraping any bits from the bottom.
  7. Stir in shredded chicken, heavy cream, frozen peas, and bay leaves.
  8. Bring to a simmer over medium-high heat.
  9. Place biscuit dough on top of the soup without pushing them under.
  10. Cover pot and reduce heat to low; simmer for about fifteen minutes.
  11. Season with salt and pepper before serving.
