Ingredients

Scale
  • 1 lb boneless, skinless chicken thighs or breasts
  • 8 oz uncooked penne pasta
  • 1 cup honey BBQ sauce
  • 2 tablespoons olive oil
  • 1/2 cup low-sodium chicken broth
  • 1 tablespoon soy sauce (optional)
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • Chopped parsley for garnish
  • Crushed red pepper flakes for a kick
  • Shredded cheddar or mozzarella cheese

Instructions

  1. Heat olive oil in a large non-stick skillet over medium-high heat. Sear the chicken pieces until golden brown and cooked through (about 7–10 minutes). Season with salt, pepper, smoked paprika, and garlic powder.
  2. Remove the chicken from the skillet. Deglaze the pan with low-sodium chicken broth, scraping any brown bits off the bottom.
  3. Stir in the honey BBQ sauce and soy sauce (if using) and let simmer for 2–3 minutes.
  4. Add uncooked penne along with enough water to cover it (about 1 to 1½ cups). Cover and simmer for 12–15 minutes until the pasta is tender.
  5. Return the chicken to the skillet and mix everything together. Let simmer for an additional couple of minutes.
  6. Serve hot, garnished with parsley, crushed red pepper flakes, and shredded cheese if desired.
