  • 1 lb chicken or turkey sausage, sliced
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1/2 cup BBQ sauce
  • 1 small onion, diced
  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a large skillet, heat olive oil over medium heat. Add sausage slices and brown for 4–5 minutes. Remove from skillet and set aside.
  2. In the same skillet, add onion and bell pepper; sauté for 3–4 minutes until softened. Stir in garlic and cook for an additional 30 seconds.
  3. Add smoked paprika and black pepper; combine well with the vegetables. Stir in uncooked rice and toast lightly for 1–2 minutes.
  4. Pour in chicken broth and BBQ sauce, mixing thoroughly. Return browned sausage to the pan.
  5. Bring to a boil, then cover and reduce heat to low. Simmer for about 20–22 minutes until rice is tender.
  6. Let rest for 5 minutes before fluffing with a fork. Garnish with chopped parsley before serving.
