  • 1/2 cup brown sugar (packed)
  • 1 teaspoon vanilla extract
  • 3 cups rolled oats
  • 1 cup semisweet or dark chocolate chips
  • 1/2 cup peanut butter

Instructions

  1. Prepare an 8-inch or 9-inch square baking dish by lining it with parchment paper.
  2. In a large saucepan over medium heat, melt the butter with brown sugar until smooth. Stir in vanilla extract.
  3. Add rolled oats to the mixture and cook over low heat for about 3 to 4 minutes.
  4. Press half of the oat mixture into the prepared baking dish to form the base layer.
  5. Melt chocolate chips and peanut butter in a microwave-safe bowl until smooth. Pour over the base layer.
  6. Top with remaining oat mixture and press down gently. Drizzle any reserved chocolate on top.
  7. Chill in the refrigerator for about 2 to 3 hours until set.
