  • 10 oz. mushrooms (button or baby bella)
  • 2 tablespoons salted butter
  • 2 large boneless skinless chicken breasts
  • Salt and pepper to taste
  • ½ cup all-purpose flour
  • 34 tablespoons olive oil
  • 2 ½ cups beef broth
  • 1 chicken bouillon cube or 1 tsp better than bouillon
  • 1 teaspoon soy sauce
  • 1 teaspoon onion powder
  • ½ teaspoon mustard powder
  • ½ teaspoon dried thyme
  • ½ cup dry white grape juice
  • 3 cloves garlic (minced)
  • 3 tablespoons cornstarch mixed with water
  • â…“ cup heavy cream

Instructions

  1. Sauté sliced mushrooms in melted butter with salt and pepper over medium heat until golden brown (5-7 minutes). Set aside.
  2. Season chicken breasts with salt and pepper, then dredge lightly in flour.
  3. In the same skillet, add olive oil over medium-high heat and brown chicken for about 5-6 minutes on each side. Remove from pan.
  4. Add beef broth, bouillon, soy sauce, onion powder, mustard powder, thyme, grape juice, minced garlic, and cornstarch mixture to the skillet. Stir and simmer for about 5-7 minutes until thickened.
  5. Reduce heat to low; stir in heavy cream and return chicken and mushrooms to the pan. Simmer for another few minutes before serving.
