  • 2 cups mushrooms, halved
  • 1 clove garlic, minced
  • 3 sprigs thyme
  • 1 1/2 cups dry white grape juice
  • 1/2 cup seasoned flour
  • 2 tbsp butter
  • 2 tbsp olive oil
  • 1/2 cup heavy cream
  • 1/3 cup shredded asiago cheese
  • Salt and pepper to taste

Instructions

  1. Prepare the Chicken: Pound chicken breasts until about 1/4-inch thick and cut into serving-sized pieces.
  2. Sauté the Chicken: Heat butter and olive oil in a skillet over medium heat. Dredge chicken in seasoned flour and cook until golden brown on both sides, about 5 minutes per side.
  3. Cook the Mushrooms: In the same skillet, add more olive oil and sauté mushrooms with garlic until browned.
  4. Deglaze: Pour in grape juice while scraping up browned bits from the pan for added flavor.
  5. Simmer Together: Add thyme sprigs and return chicken to the pan. Bring to a boil, then reduce heat and let simmer for 15–20 minutes.
  6. Make the Sauce: Remove chicken again; stir in heavy cream and asiago cheese until smooth.
  7. Combine & Serve: Return chicken to the pan to heat through before serving garnished with fresh thyme.
