Ingredients

  • 1 cup (240g) almond butter
  • 2 tbsp (42g) honey
  • 1/4 cup (30g) vanilla protein powder
  • 1/4 tsp peppermint extract
  • 1/4 cup (40g) mini dark chocolate chips
  • 12 tbsp (15-30ml) unsweetened almond milk (if needed)

Instructions

  1. In a large bowl, mix rolled oats, almond butter, honey, vanilla protein powder, and peppermint extract until well combined.
  2. If the mixture is too dry, add unsweetened almond milk one tablespoon at a time until the desired consistency is achieved.
  3. Gently fold in mini dark chocolate chips.
  4. Roll about 1 tablespoon of the mixture into balls and place them on a parchment-lined baking sheet.
  5. Refrigerate for at least 20 minutes to firm up.
  6. Store in an airtight container in the refrigerator for up to one week.
