- 1 cup (240g) almond butter
- 2 tbsp (42g) honey
- 1/4 cup (30g) vanilla protein powder
- 1/4 tsp peppermint extract
- 1/4 cup (40g) mini dark chocolate chips
- 1–2 tbsp (15-30ml) unsweetened almond milk (if needed)
- In a large bowl, mix rolled oats, almond butter, honey, vanilla protein powder, and peppermint extract until well combined.
- If the mixture is too dry, add unsweetened almond milk one tablespoon at a time until the desired consistency is achieved.
- Gently fold in mini dark chocolate chips.
- Roll about 1 tablespoon of the mixture into balls and place them on a parchment-lined baking sheet.
- Refrigerate for at least 20 minutes to firm up.
