  • 1 cup chocolate cookie crumbs
  • 2 tablespoons granulated sugar
  • 4 tablespoons melted unsalted butter
  • 16 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 1 tablespoon unsweetened cocoa powder
  • 1/4 cup sour cream
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 tablespoon red food coloring
  • 1 tablespoon all-purpose flour

Instructions

  1. Preheat the oven to 325°F (160°C) and line a muffin tin with paper liners.
  2. In a bowl, combine chocolate cookie crumbs, sugar, and melted butter. Mix well.
  3. Divide crust mixture into muffin tins and press down firmly. Bake for 5 minutes.
  4. Beat softened cream cheese until smooth in a mixing bowl.
  5. Add sugar, cocoa powder, and flour; mix until combined. Then add sour cream, egg, vanilla extract, and red food coloring; blend until smooth.
  6. Fill each crust with cheesecake mixture and bake for 18–20 minutes until slightly jiggly in the center.
  7. Cool for 15 minutes in the pan before transferring to a wire rack to chill in the refrigerator for at least 2 hours.
