  • 1 1/4 cups Heavy Cream
  • 5 Tablespoons Unsalted Butter
  • 12 to 16 ounces White Chocolate
  • 1 cup White Sugar
  • 1 1/2 cups Flour
  • 6 Tablespoons Unsalted Butter (for caramel)
  • 1 teaspoon Vanilla Extract
  • 1/3 cup Corn Syrup
  • 3 teaspoons Pumpkin Pie Spice
  • 1/2 teaspoon Salt
  • 1/4 cup Water
  • 2 Tablespoons Corn Syrup
  • 1/2 cup Fine Ground Cornmeal
  • 1 heaping Tablespoon White Sugar
  • 1/4 to 1/3 cup Ice Cold Water
  • 1 Tablespoon Apple Cider Vinegar
  • 1/2 cup Flour (for streusel)
  • 1/3 cup Light Brown Sugar
  • 1/3 cup Rolled Oats
  • 1 teaspoon Cinnamon
  • 1/2 teaspoon Cardamom
  • 2 cups Heavy Cream
  • 3 Tablespoons Powdered Sugar

Instructions

  1. Prepare the crust by combining flour, cornmeal, sugar, and salt in a bowl. Cut in cold butter until crumbly. Add ice water and apple cider vinegar until the dough comes together. Chill for 30 minutes.
  2. Roll out the chilled dough, fit it into a pie pan, prick the bottom, and bake until golden brown.
  3. For the filling, melt heavy cream, corn syrup, butter, and white chocolate in a saucepan over low heat. Stir in pumpkin puree and spices. Let cool slightly before pouring into the crust.
  4. Make the caramel by melting sugar until amber; carefully mix in cream and butter. Cool slightly before drizzling over the pumpkin filling.
  5. Prepare streusel topping by mixing all ingredients and sprinkle over the pie.
  6. Bake until set and bubbly. Allow to cool before serving with whipped cream.
