  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup cooked rice or quinoa
  • 1 cup cherry tomatoes, halved
  • 1/2 cucumber, diced
  • 1/4 red onion, thinly sliced
  • 1/2 cup feta cheese or dairy-free alternative, crumbled
  • 1/2 cup tzatziki sauce
  • Fresh parsley, for garnish

Instructions

  1. Marinate the chicken: In a bowl, mix olive oil, lemon juice, minced garlic, oregano, cumin, paprika, salt, and pepper. Coat the chicken breasts in the marinade and let sit for at least 30 minutes.
  2. Cook the chicken: Heat a skillet over medium heat. Cook the marinated chicken for 5–6 minutes on each side until golden brown and cooked through. Let rest before slicing.
  3. Assemble the bowls: Divide cooked rice or quinoa into bowls and top with sliced chicken, cherry tomatoes, cucumber, red onion, and crumbled feta.
