  • 1.5 lbs white fish fillets (cod, halibut, or tilapia)
  • 2 tablespoons olive oil
  • 1 medium red onion, sliced
  • 3 garlic cloves, minced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 cup cherry tomatoes, halved
  • 1/3 cup pitted Kalamata olives, halved
  • Juice and zest of 1 lemon
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C). Lightly grease a baking dish with olive oil.
  2. In a large bowl, combine sliced onions, bell peppers, cherry tomatoes, garlic, olives, and capers. Drizzle with olive oil and season with oregano, salt, and pepper. Toss to coat evenly.
  3. Spread the vegetable mixture in the prepared baking dish. Place fish fillets on top and squeeze lemon juice over them. Sprinkle with lemon zest and additional seasoning if desired.
  4. Bake uncovered for 20–25 minutes until the fish is opaque and flakes easily with a fork.
  5. Garnish with fresh parsley and serve with lemon wedges.
