  • 1 can (15 oz) chickpeas, rinsed and drained
  • 1 cup sun-dried tomatoes, chopped
  • 1/2 medium red onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 3 tbsp extra virgin olive oil
  • 2 tbsp balsamic vinegar
  • Salt and pepper to taste

Instructions

  1. Rinse and drain the chickpeas thoroughly to remove excess sodium.
  2. In a large bowl, combine the chickpeas, sun-dried tomatoes, red onion, and parsley.
  3. In a separate bowl, whisk together olive oil, balsamic vinegar, salt, and pepper until well mixed.
  4. Pour the dressing over the salad ingredients and toss gently to coat.
