  • 1 onion, finely chopped
  • 3 cloves garlic, finely chopped
  • 4 ripe tomatoes, chopped
  • 1 tsp ground cumin
  • 1 tsp paprika powder
  • ½ tsp smoked paprika powder (optional)
  • ⅓ tsp turmeric
  • 1 tbsp tomato paste
  • 1 can (15oz) white beans (Cannellini or Navy beans)
  • 1 cup veggie broth
  • ¾ cup dry white beans (Cannellini or Navy beans)

Instructions

  1. In a pot over medium heat, warm the olive oil. Sauté the onions and garlic until soft and fragrant (about 3-5 minutes).
  2. Add the chopped tomatoes along with cumin, paprika powders, turmeric, tomato paste, salt, and black pepper. Cook until tomatoes break down (about 5 minutes).
  3. Stir in both canned and dried white beans along with one cup of veggie broth.
  4. For stovetop cooking: Cover and simmer on low for about 20 minutes until dried beans are tender. For Instant Pot: Secure lid and set to manual pressure for 10 minutes followed by natural release.
  5. Taste and adjust seasoning as needed before serving warm with your choice of sides.
