  • 2 tbsp olive oil
  • 1 onion (finely chopped)
  • 3 cloves of garlic (finely chopped)
  • 4 ripe tomatoes (chopped)
  • 1 tsp ground cumin
  • 1 tsp paprika powder
  • ½ tsp smoked paprika powder (optional)
  • ⅓ tsp turmeric
  • 1 tbsp tomato paste
  • Dash of salt & black pepper
  • 1 can (15oz) canned white beans (Cannellini, Navy, Great Northern)
  • 1 cup veggie broth
  • ¾ cup dry white beans (Cannellini, Navy, Great Northern)
  • 1 ½2 cups veggie broth

Instructions

  1. Heat olive oil in a pot over medium heat. Sauté chopped onion until translucent, then add garlic and cook until fragrant.
  2. Stir in chopped tomatoes, cumin, paprika, turmeric, salt, and pepper. Cook for 5 minutes to blend flavors.
  3. Add canned and dry beans along with veggie broth. Stir well and bring to a gentle boil.
  4. Reduce heat, cover, and simmer for 20 minutes on the stovetop or cook on high pressure in an Instant Pot for 10 minutes followed by natural release.
  5. Adjust consistency with more broth if needed. Taste and season before serving warm.
