  • 2 live lobsters (about 1.5 lbs each)
  • 1 medium onion, finely chopped
  • 1 medium carrot, diced
  • 1 stalk celery, diced
  • 2 garlic cloves, minced
  • 2 tbsp tomato paste
  • 1 tsp dried thyme
  • 1 cup dry white grape juice
  • 4 cups fish stock or broth
  • 1 cup heavy cream
  • 2 tbsp unsalted butter
  • Salt and pepper to taste
  • Juice of half a lemon

Instructions

  1. Cook the lobsters in boiling salted water for 8-10 minutes until bright red. Remove and let cool before cracking the shells.
  2. In another pot, melt butter over medium heat. Sauté onions, carrots, celery, and garlic for about 5-7 minutes until soft.
  3. Add tomato paste and thyme; cook for another 2-3 minutes.
  4. Deglaze with white grape juice; simmer until reduced by half (about 5 minutes).
  5. Stir in fish stock and lobster shells; simmer for 30 minutes.
  6. Remove shells and blend the mixture until smooth.
  7. Return to low heat; stir in heavy cream and finish with lemon juice, salt, and pepper.
