  • 2 fresh lemons (juice and zest)
  • 4 garlic cloves (minced)
  • ¼ cup extra virgin olive oil
  • 2 tsp salt
  • 1 tsp black pepper
  • 2 tbsp honey
  • 1 tbsp Dijon mustard
  • 1 cup fresh green beans

Instructions

  1. Make the marinade by whisking together lemon juice, lemon zest, minced garlic, honey, Dijon mustard, olive oil, salt, and pepper in a bowl until smooth.
  2. Place the beef tenderloin in a resealable bag and pour the marinade over it. Refrigerate for at least 30 minutes or up to overnight.
  3. Preheat the grill to medium-high heat (400°F/200°C).
  4. Grill the marinated beef for 6-8 minutes per side until it reaches an internal temperature of 145°F (63°C). Discard leftover marinade.
  5. Toss green beans with olive oil, salt, and pepper. Grill on indirect heat for about 5-7 minutes until tender yet crisp.
  6. Let the beef rest for 5 minutes before slicing into medallions. Serve with charred green beans and garnish with fresh herbs.
