  • 4 boneless skinless chicken breasts
  • 2 tablespoons olive oil
  • 3 cloves garlic (minced)
  • 1 cup chicken broth
  • ¾ cup heavy cream
  • Juice and zest of 1 lemon
  • ½ cup grated Parmesan cheese
  • 4 cups fresh spinach leaves

  1. Pound chicken breasts to an even thickness, season with salt and pepper.
  2. Heat olive oil in a large pan over medium-high heat; cook chicken for 3-4 minutes per side until golden brown. Remove from pan.
  3. In the same pan, sauté minced garlic for about a minute. Add chicken broth, lemon juice, and zest; bring to boil.
  4. Lower heat, mix in heavy cream, and let simmer for 5 minutes until thickened. Stir in parmesan cheese until melted.
  5. Add spinach and wilt for about one minute; return chicken to the pan, spooning sauce over it. Let sit covered for 2 minutes.
  6. Serve garnished with sliced lemon and more parmesan.
