  • 1 ½ cups rolled oats
  • 1 cup all-purpose flour
  • ¾ cup brown sugar
  • ½ cup melted coconut oil
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 1 cup fresh lemon juice
  • 2 tablespoons cornstarch
  • ½ cup granulated sugar
  • 1 tablespoon lemon zest

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix rolled oats, flour, brown sugar, baking soda, and salt. Add melted coconut oil and combine until crumbly.
  3. Press half of the mixture into the bottom of an ungreased 9×9-inch baking pan.
  4. In another bowl, whisk together fresh lemon juice, cornstarch, granulated sugar, and lemon zest. Pour over the crust.
  5. Sprinkle the remaining oat mixture on top of the lemon filling.
  6. Bake for approximately 38 minutes or until golden brown. Allow to cool completely before slicing.
