  • 2 tablespoons olive oil
  • 1 ¼ lbs. boneless skinless chicken breast
  • lemon pepper seasoning
  • 1 teaspoon EACH: dried oregano, basil, parsley, mustard powder
  • ½ teaspoon dried dill weed
  • ½ cup dry white grape juice
  • 2 tablespoons butter
  • 1 small yellow onion (diced)
  • ¾ cup carrots (diced)
  • 2 sticks celery (diced)
  • 4 cloves garlic
  • 6 cups chicken broth
  • 1 teaspoon hot sauce
  • ½ cup heavy cream
  • 2 cups fresh spinach
  • ½ cup parmesan cheese (freshly grated)
  • Juice of 1 lemon (34 Tbsp.)
  • ¾ cup orzo (uncooked)

Instructions

  1. Heat olive oil in a pot over medium-high heat. Season the chicken with lemon pepper and sear until golden on both sides. Remove and let rest before dicing.
  2. In the same pot, deglaze with white grape juice, scraping up browned bits. Simmer until reduced by half.
  3. Add butter, diced onion, carrots, and celery; sauté until soft. Stir in garlic and herbs.
  4. Pour in chicken broth and return the chicken to the pot; bring to a boil then reduce to simmer.
  5. Cook orzo separately according to package instructions.
  6. Stir in heavy cream and Parmesan until melted; add spinach and lemon juice just before serving.
  7. Serve the warm soup over cooked orzo.
