  • 1 cup crushed pineapple, well-drained
  • 1/2 cup icing sugar
  • 2 tbsp pineapple juice

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan.
  2. In a medium bowl, whisk together the flour, baking powder, and salt.
  3. In a large bowl, cream together the softened butter and sugar until light and fluffy.
  4. Beat in the eggs one at a time followed by vanilla extract.
  5. Gently fold in the sour cream until well combined.
  6. Gradually add the dry ingredients to the wet mixture until just combined.
  7. Fold in the drained crushed pineapple carefully.
  8. Pour the batter into the prepared pan and bake for about 30–35 minutes or until a toothpick inserted comes out clean.
  9. While baking, mix together icing sugar and pineapple juice for the glaze once cooled.
  10. Allow the cake to cool completely before drizzling with glaze.
