  • 1 cup sour cream
  • 3 medium apples, peeled and diced
  • ⅓ cup brown sugar
  • 1 teaspoon cinnamon
  • 2 tablespoons cornstarch
  • 2 tablespoons water
  • 1 tablespoon lemon juice
  • ¾ cup all-purpose flour
  • ½ cup brown sugar
  • ½ teaspoon cinnamon
  • ½ cup cold unsalted butter, cubed

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. In a bowl, mix graham cracker crumbs, melted butter, and sugar until combined. Press into the bottom of a springform pan to form the crust.
  3. Beat cream cheese until smooth; add sugar and vanilla extract. Mix in eggs one at a time followed by sour cream until smooth.
  4. In another bowl, combine apples with brown sugar, cinnamon, cornstarch, water, and lemon juice.
  5. Pour cheesecake filling over the crust and spread apples evenly on top.
  6. For the crumble topping, mix flour, brown sugar, cinnamon, and cold cubed butter until crumbly; sprinkle over apples.
  7. Bake for about 65 minutes or until set around edges but slightly jiggly in the center.
