  • 24 oz cream cheese, softened
  • 3 large eggs
  • 1 cup sour cream
  • 3 medium apples, peeled and diced
  • ⅓ cup brown sugar
  • 1 teaspoon cinnamon
  • 2 tablespoons cornstarch
  • 2 tablespoons water
  • 1 tablespoon lemon juice
  • ¾ cup all-purpose flour
  • ½ cup brown sugar
  • ½ teaspoon cinnamon
  • ½ cup cold unsalted butter, cubed

Instructions

  1. Preheat your oven to 325°F (165°C). In a bowl, mix graham cracker crumbs, melted butter, and granulated sugar to form the crust. Press into the bottom of a springform pan.
  2. Beat softened cream cheese until smooth. Add granulated sugar and vanilla extract; mix well. Add eggs one at a time, then gently fold in sour cream.
  3. Cook diced apples with brown sugar, cinnamon, cornstarch, water, and lemon juice until slightly softened.
  4. Pour cheesecake filling over the crust, layer cooked apples on top, and sprinkle crumble topping made from flour, brown sugar, cinnamon, and cubed butter.
  5. Bake for about 60 minutes until set but slightly jiggly in the center. Let cool completely before refrigerating.
