  • 3 pounds beef stew meat (or lamb)
  • 1/4 cup all-purpose flour
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 2 teaspoons fresh rosemary
  • 1 teaspoon dried thyme
  • 4 cups beef broth
  • 5 carrots (peeled and cut into chunks)
  • 1 cup frozen peas
  • 2 bay leaves

Instructions

  1. Heat olive oil in a large Dutch oven over medium-high heat.
  2. In a ziplock bag, combine beef with flour, salt, pepper, garlic powder, onion powder, rosemary, and thyme; shake until coated.
  3. Sear the coated meat in the hot oil until browned on all sides.
  4. Add beef broth gradually while stirring to deglaze the pot.
  5. Stir in carrots and bay leaves; bring to a boil.
  6. Lower the heat and cover; let simmer for about 45 minutes.
  7. Five minutes before serving, add frozen peas.
  8. Remove bay leaves and serve the stew over fluffy mashed potatoes.
