  • 8 chicken thighs (or preferred cuts)
  • ½ head cabbage, roughly chopped
  • 4 potatoes, peeled and sliced into rounds
  • 1 medium onion, sliced
  • ½ cup chicken stock
  • 1 ½ teaspoons thyme
  • 1 teaspoon smoked paprika
  • ½ teaspoon salt
  • ½ teaspoon onion powder
  • ½ teaspoon garlic powder
  • ¼ teaspoon black pepper

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a small bowl, combine thyme, smoked paprika, salt, onion powder, garlic powder, and black pepper for the dry rub.
  3. Sear the chicken in a large oven-safe sauté pan until browned on both sides.
  4. Sauté the cabbage until slightly wilted.
  5. Add potatoes and onions to the pan with chicken stock; mix well.
  6. Return seared chicken to the pan on top of the vegetables.
  7. Bake for about 45–50 minutes or until chicken reaches an internal temperature of 165°F (75°C).
