  • 1/2 cup honey
  • 1/4 cup olive oil
  • 2 tablespoons red apple vinegar
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon red pepper flakes (adjust to taste)
  • Salt and pepper, to taste
  • 1 cup crumbled feta cheese
  • Fresh parsley, chopped (for garnish)
  • Lemon slices (for serving)

Instructions

  1. In a medium bowl, whisk together honey, olive oil, red apple vinegar, minced garlic, oregano, red pepper flakes, salt, and pepper.
  2. Place chicken breasts in a resealable bag or shallow dish and pour marinade over them. Seal or cover and refrigerate for 30 minutes to 4 hours.
  3. Preheat oven to 400°F (200°C).
  4. Prepare feta mixture by combining crumbled feta with a drizzle of olive oil and seasoning in a small bowl.
  5. Remove chicken from marinade (discard leftover marinade) and place in a baking dish. Top each breast with the feta mixture.
  6. Bake for 25 to 30 minutes until chicken is cooked through (internal temperature of 165°F or 75°C) and feta is golden.
  7. Let the chicken rest for about 5 minutes before serving with fresh parsley and lemon slices.
