  • ¼ cup lightly packed light brown sugar

  • 16 ounces carrots, peeled and sliced

  • ¼ cup granulated sugar
  • 2 tablespoons water
  • 1 teaspoon vanilla extract
  • ½ teaspoon coarse kosher salt
  • 3 large eggs
  • ½ cup heavy cream
