  • 8 ounces baby bella mushrooms
  • 4 tablespoons unsalted butter
  • 1 cup vegetable oil (for frying shallots)
  • 1 1/2 cups chicken broth
  • 1/2 cup heavy whipping cream
  • 1 tablespoon Dijon mustard
  • Fried shallots (made from medium shallots)

Instructions

  1. Prepare the fried shallots by heating vegetable oil in a pan over medium heat. Add sliced shallots and fry until golden brown; set aside.
  2. Blanch trimmed green beans in boiling salted water for 3-5 minutes until bright green yet crisp; drain.
  3. In a skillet, melt butter over medium heat and sauté sliced mushrooms and minced garlic until softened. Stir in flour and gradually add chicken broth while stirring to create a smooth sauce.
  4. Mix in lemon juice, Dijon mustard, thyme, red pepper flakes, nutmeg, salt, pepper, and heavy cream; simmer briefly.
  5. Combine blanched green beans with mushroom sauce and half of the parmesan cheese. Transfer to a baking dish, top with fried shallots and remaining cheese.
  6. Bake at 350°F (175°C) for 25 minutes until bubbly and golden.
