  • 2/3 cup maple syrup or honey
  • 1/4 cup 2% Greek yogurt (plain or vanilla)
  • 1/4 cup vegetable oil
  • 1 egg
  • 1 2/3 cups whole wheat flour
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, whisk together the pumpkin puree, maple syrup (or honey), Greek yogurt, vegetable oil, egg, and vanilla essence until smooth.
  3. In another bowl, mix whole wheat flour, ground cinnamon, nutmeg, baking soda, baking powder, and salt.
  4. Gradually add the dry mixture into the wet mixture and stir gently until just combined.
  5. Line your muffin tin with paper liners or grease it lightly and fill each cup about two-thirds full with batter.
  6. Bake for approximately 18 minutes or until a toothpick comes out clean when inserted into the center.
