  • 1/4 cup melted coconut oil (for crust)
  • 1/2 cup coconut sugar (for filling)
  • 1/4 cup maple syrup
  • 2 eggs (room temperature)
  • 1 1/2 cups chopped pecans

Instructions

  1. Preheat your oven to 350°F and line a 9×9-inch baking pan with parchment paper.
  2. In a bowl, mix almond flour, melted coconut oil, maple syrup, and vanilla extract for the crust. Press into the pan and bake for 10 minutes until lightly golden.
  3. In another bowl, whisk together coconut sugar, melted coconut oil, maple syrup, vanilla extract, and eggs. Fold in chopped pecans.
  4. Pour the filling over the baked crust and spread evenly. Bake for an additional 20-25 minutes until set.
  5. Allow to cool for 30 minutes before chilling in the fridge for one hour before slicing.
