  • 1/4 cup cashew butter (or peanut butter)
  • 1/4 cup maple syrup
  • 2 tbsp melted coconut oil
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 1 cup chocolate chips

Instructions

  1. In a mixing bowl, combine almond flour, cashew butter, maple syrup, melted coconut oil, vanilla extract, and salt. Mix until well blended then stir in half of the chocolate chips.
  2. Line a cutting board with parchment paper and spread the cookie dough mixture onto it, pressing down to form an even layer about 1/2-inch thick.
  3. Melt the remaining chocolate chips with a teaspoon of coconut oil in the microwave in short intervals until smooth.
  4. Pour the melted chocolate over the cookie dough layer and spread it evenly. Optionally, sprinkle flaky sea salt on top.
  5. Place in the freezer for about 10 minutes to set before slicing into pieces.
