  • 1.5 lbs chicken breast, cut into bite-sized pieces
  • 1/4 cup soy sauce
  • 2 tablespoons olive oil
  • 2 tablespoons honey (or brown sugar)
  • 3 cloves garlic, minced
  • 1 teaspoon ground ginger
  • 1 can (20 oz) pineapple chunks, drained (reserve juice)
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 medium red onion, cut into wedges
  • Fresh cilantro for garnish

Instructions

  1. Preheat oven to 400°F (200°C). In a large bowl, combine chicken pieces with soy sauce, olive oil, honey, garlic, ginger, salt, and pepper. Let marinate for 10–15 minutes.
  2. Spread the diced bell peppers, onion wedges, and drained pineapple on a large sheet pan.
  3. Place marinated chicken over the vegetables and pour any remaining marinade on top.
  4. Bake for 25–30 minutes, stirring halfway through until chicken reaches an internal temperature of 165°F (74°C).
  5. Garnish with fresh cilantro and serve warm over rice or quinoa.
