  • 1/2 cup sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 1/4 cups ripe bananas (about 3 medium bananas)
  • 1 (8-ounce) can crushed pineapple with juice
  • 1/2 cup + 1 tbsp organic sunflower oil
  • 1/2 cup macadamia nuts (dry roasted & chopped)
  • 1/2 cup unsweetened coconut flakes

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. Dry roast macadamia nuts until slightly browned; set aside.
  3. In one bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
  4. In another bowl, combine eggs, vanilla extract, ripe bananas, crushed pineapple (with juice), and oil.
  5. Gradually mix dry ingredients into wet ingredients until just combined.
  6. Fold in the macadamia nuts and coconut flakes.
  7. Pour batter into the prepared pan and bake for 55-65 minutes or until a knife comes out clean.
  8. Allow to cool completely before slicing.
