  • 4 large russet potatoes (washed and patted dry)
  • 4 tablespoons unsalted butter (melted, divided)
  • 1 teaspoon kosher salt
  • ½ teaspoon pepper

Instructions

  1. Preheat your oven to 425°F (220°C) and arrange a rack in the middle position.
  2. Position each potato between two chopsticks or skewers to prevent cutting all the way through. Slice vertical slits about ⅛ inch apart down the potato until you hit the chopsticks.
  3. Place the sliced potatoes on an unlined baking sheet. Brush half of the melted butter over each potato, ensuring it gets into the slits.
  4. Season generously with kosher salt and pepper.
  5. Bake for 30 minutes; remove and gently pull apart the layers slightly. Brush with remaining melted butter.
  6. Return to the oven and bake for another 30-35 minutes until golden brown and tender.
