  • 4 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups low-sodium chicken broth
  • 2 tsp Cajun seasoning
  • 2 tbsp fresh lemon juice
  • 2 tbsp olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté the diced onions, bell pepper, and minced garlic until translucent.
  2. Add bite-sized pieces of boneless chicken thighs and sliced smoked sausage; cook until browned on all sides.
  3. Pour in the low-sodium chicken broth and add chopped collard greens. Stir gently until the greens start to wilt.
  4. Sprinkle Cajun seasoning over the mixture, stirring well to coat evenly.
  5. Mix in diced tomatoes and bring to a gentle boil. Reduce heat and let simmer for 30-45 minutes.
  6. Just before serving, squeeze in fresh lemon juice to brighten the flavors.
