  • 2 medium sweet potatoes (peeled and diced)

  • 1 red bell pepper (diced)
  • 1 cup spinach (fresh or frozen)
  • 1 cup low-sodium chicken broth
  • 1 tbsp olive oil
  • 1 tsp smoked paprika
  • 1 tsp ground cumin
  • 1/2 tsp chili powder
  • Salt and pepper (to taste)
  • 1/2 cup shredded cheese (optional for topping)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, heat olive oil over medium heat. Sauté onion and garlic until fragrant.
  3. Add ground turkey and cook until browned. Season with smoked paprika, cumin, chili powder, salt, and pepper.
  4. Stir in red bell pepper and spinach; cook for another few minutes until tender.
  5. In a separate pot, boil diced sweet potatoes until tender (about 10 minutes). Drain well.
  6. In a baking dish, layer sweet potatoes followed by the turkey mixture. Pour chicken broth over everything.
