  • 2.5 lbs yellow or Yukon gold potatoes
  • 2 cups chicken broth (or vegetable broth)
  • ½ cup olive oil
  • ½ cup lemon juice
  • 5 cloves garlic, minced
  • 1 tbsp dried oregano
  • ½ tbsp paprika
  • 1 tbsp salt

Instructions
