  • 1 tablespoon oil
  • 2 tablespoons butter or ghee
  • 1 large onion, finely chopped
  • 2 cloves garlic, minced
  • 1-inch ginger, grated
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon garam masala
  • ½ teaspoon turmeric
  • ½ teaspoon smoked paprika
  • 1 teaspoon chili powder (adjust to taste)
  • 2 tablespoons tomato paste
  • 1 can (14 oz) crushed tomatoes
  • 1 cup heavy cream or coconut milk
  • 1 teaspoon sugar (optional, balances acidity)
  • Salt and pepper to taste
  • ¼ cup chopped cilantro (for garnish)
  • 1 tablespoon lemon juice (for finishing)

Instructions

  1. Start by marinating your chicken pieces in Greek yogurt mixed with lemon juice, ginger-garlic paste, turmeric, garam masala, cumin, coriander, smoked paprika, chili powder, and salt. Let it sit for at least an hour; if you have more time, overnight is even better!
  2. In a large pan over medium heat, add oil and butter. Once melted and hot, toss in your finely chopped onions. Sauté them until they turn golden brown and translucent.
  3. Add minced garlic and grated ginger to the pan. Cook them briefly until fragrant before stirring in your spices: cumin, coriander, garam masala, turmeric, smoked paprika, and chili powder.
  4. Stir in tomato paste followed by crushed tomatoes. Let everything simmer together for about 10 minutes before adding in the heavy cream or coconut milk.
  5. Add your marinated chicken into the simmering sauce. Stir well so each piece gets coated with that luscious sauce! Cook until the chicken is fully cooked through—about 20 minutes.
  6. Once done cooking, sprinkle fresh cilantro on top and finish with a squeeze of lemon juice for brightness.
