  • 42g unsalted butter

  1. Begin by boiling the chicken broth and salt in a wide pot.
  2. Add the cauliflower florets to the boiling broth, cover, and steam for about 20 minutes until fork-tender.
  3. Transfer the steamed cauliflower to a food processor using a slotted spoon.
  4. In the same pot, whisk together butter and a few tablespoons of hot broth until smooth.
  5. Pour the buttery mixture over the cauliflower along with thyme and black pepper. Blend until smooth; adjust consistency with more warm broth if desired.
