  • 2 cups gingersnap crumbs
  • 24 ounces cream cheese
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 3 large eggs
  • 1/4 cup molasses
  • 2/3 cup sour cream
  • 2 teaspoons ground ginger
  • 1 teaspoon cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/8 teaspoon ground cloves
  • 2 tablespoons cornstarch
  • 2 teaspoons vanilla extract
  • 6 tablespoons unsalted butter
  • boiling water (for the water bath)

Instructions

  1. Preheat your oven to 325°F (163°C) and lightly grease a 9-inch springform pan.
  2. Combine gingersnap crumbs with brown sugar and melted butter; press firmly into the bottom of the prepared pan.
  3. In a large bowl, beat softened cream cheese until smooth; gradually mix in sugars, followed by spices, cornstarch, molasses, sour cream, and vanilla extract. Add eggs one at a time until just blended.
  4. Pour filling over crust and smooth the top. Place the springform pan inside a larger pan filled with boiling water for a water bath.
  5. Bake for about 60 minutes until edges are set but center is slightly wobbly. Cool in the oven with the door cracked for about an hour before chilling in the fridge for at least four hours or overnight.
