  • 1 large bulb of garlic
  • 1.3 kg (2.8 lb) baking potatoes
  • 5 tbsp (75g) butter (2 tbsp melted)
  • 2 tbsp heavy cream
  • 60g (3/4 cup) freshly grated parmesan cheese
  • 4 large egg yolks
  • Olive oil
  • Salt and pepper

Instructions

  1. Roast the garlic by slicing off the tip of the bulb, drizzling with olive oil, wrapping in foil, and baking until soft.
  2. Boil peeled and diced potatoes in salted cold water until fork-tender; drain well.
  3. Mash the potatoes with melted butter and cream, then mix in roasted garlic and parmesan. Season with salt and pepper.
  4. Pipe the mixture into swirled shapes on a baking sheet.
  5. Bake until golden brown, drizzling with melted butter halfway through.
