  • 1 large bulb of garlic
  • 1.3 kg (2.8 lb) baking potatoes
  • 5 tbsp (75g) butter (2 tbsp melted)
  • 2 tbsp heavy cream
  • 60g (3/4 cup) freshly grated Parmesan cheese
  • 4 large egg yolks
  • Salt and pepper to taste
  • Olive oil as needed
  • Finely diced fresh parsley for garnish

Instructions

  1. Roast the garlic by slicing off the tip of the bulb, drizzling with olive oil, wrapping in foil, and roasting at 180C (356F) for 50-60 minutes.
  2. Peel and dice the baking potatoes, boil in salted water until fork-tender, then drain well.
  3. Mash the drained potatoes with butter, heavy cream, roasted garlic cloves, and Parmesan until smooth. Season with salt and pepper; stir in egg yolks one at a time.
  4. Pipe the mixture into swirls on a parchment-lined baking tray.
  5. Drizzle with melted butter and bake at 200C (400F) for 15-20 minutes until golden brown.
