  • 1 (14 oz) can sweetened condensed milk
  • 1 cup whole milk
  • 1 cup heavy cream
  • 2 egg yolks
  • 1/4 cup cornstarch
  • 1 teaspoon vanilla extract
  • 6 fresh strawberries, halved

Instructions

  1. Prepare the tartlet shells by cutting and pressing Pâte Sucrée dough into tartlet pans. Freeze for 15-30 minutes.
  2. Preheat the oven to 375°F and bake the chilled shells for 10-15 minutes until lightly browned.
  3. For the strawberry jam, cook chopped strawberries with sugar over medium heat until thickened.
  4. Prepare the pastry cream by simmering sweetened condensed milk, whole milk, and heavy cream. Whisk egg yolks with cornstarch and gradually mix in before returning everything to heat until thickened.
  5. Chill the pastry cream in the refrigerator for about two hours.
  6. Assemble tartlets by spreading jam in each shell, piping on pastry cream, and topping with halved strawberries.
