  • 300 g Cavatappi Macaroni
  • 5 Onions (thinly sliced)
  • 1/2 cup Beef Broth
  • 3 cups Heavy Cream
  • 1 cup Grated Parmesan Cheese
  • 1 tbsp Flour + 3 tbsp Water (for béchamel)
  • 1 tbsp Olive Oil
  • 1 tbsp Garlic Powder
  • 2 tsp Oregano
  • 2 tsp Salt
  • 1 tsp Pepper
  • 1 tsp Sugar
  • 1 tbsp Smoked Paprika Powder
  • 1/2 tsp Nutmeg

Instructions

  1. Thinly slice the onions and caramelize them in olive oil over medium heat for 30–40 minutes until golden.
  2. Deglaze the pan with beef broth and simmer to enhance flavors.
  3. In another pot, create a béchamel by whisking flour into melted butter, then gradually adding heavy cream until thickened.
  4. Mix two-thirds of the caramelized onions into the sauce along with seasonings and cheese.
  5. Cook cavatappi until just shy of al dente and combine with the sauce.
  6. Transfer to a baking dish, top with remaining onions and breadcrumbs, then bake at 350°F (175°C) for 10–15 minutes until golden brown.
