  • 4 large Yukon Gold potatoes
  • 1 cup shredded cheese (Gruyère, Swiss, cheddar, or mozzarella)
  • ½ cup grated Parmesan cheese
  • 1 cup heavy cream or whole milk
  • ½ cup beef broth or vegetable broth
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder
  • ½ teaspoon dried thyme
  • 1 teaspoon fresh thyme leaves
  • Extra Parmesan cheese
  • Crispy fried onions (optional)

Instructions

  1. Sauté sliced onions in olive oil and butter over medium heat for 20-25 minutes until golden brown.
  2. Preheat oven to 375°F (190°C) and grease a baking dish.
  3. Slice potatoes into ¼-inch rounds and layer half in the dish followed by sautéed onions and half the cheeses. Repeat layers.
