  • ¼ cup unsalted butter (melted)
  • 2 cups sharp cheddar cheese (shredded)
  • 1 ½ cups sour cream
  • 1 small yellow onion (diced)
  • ½ cup chicken broth
  • 2 large yellow onions (sliced for topping)
  • Vegetable oil for frying
  • 2 teaspoons garlic (minced)
  • ¼ cup (31 g) all-purpose flour
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • ½ teaspoon cayenne pepper
  • ½ teaspoon dried mustard
  • ½ cup whole milk (room temperature)

Instructions

  1. Preheat the oven to 350°F.
  2. Spray a 9×13-inch baking dish with nonstick spray.
  3. In a skillet, melt butter over medium heat and sauté diced onion until translucent, about 5 minutes.
  4. In a large bowl, combine thawed hash browns, melted butter, cheddar cheese, sour cream, sautéed onions, garlic, flour, salt, black pepper, cayenne pepper, chicken broth, and whole milk. Stir well.
  5. Pour the mixture into the prepared baking dish and smooth the top.
  6. In another skillet, heat vegetable oil over medium-high heat. Fry sliced onions until golden brown and crispy.
  7. Bake uncovered for about 50 minutes until bubbly and golden brown on top. Add crispy onions during the last few minutes of baking.
