  • 2 pounds boneless skinless chicken breasts or thighs
  • 3 medium carrots
  • 3 medium stalks celery
  • 3 cloves garlic
  • 6 cups low-sodium chicken broth
  • 3/4 cup dry white grape juice
  • 1/4 cup all-purpose flour
  • 1/2 baguette
  • 2 ounces Gruyère cheese

Instructions

  1. In a large pot, melt 4 tablespoons of butter over medium heat. Add sliced onions, thyme, bay leaves, salt, and pepper. Sauté slowly until caramelized (about 25 minutes).
  2. Stir in diced carrots and celery; cook for an additional 5 minutes before adding minced garlic.
  3. Nestle chicken into the pot and pour in dry white grape juice along with apple juice to deglaze.
  4. Sprinkle flour while stirring continuously to avoid lumps, then add chicken broth.
  5. Bring to a gentle boil, reduce heat, and simmer uncovered for about 45 minutes until the chicken is tender.
  6. Shred the chicken and return to the pot. Serve topped with toasted baguette slices and melted Gruyère cheese.
