  • 1 lb ground turkey or chicken sausage
  • 5 cups chicken stock

  • 3 garlic cloves (minced)
  • 1 medium white onion (diced)
  • Salt and black pepper (to taste)

Instructions

  1. In a large stockpot over medium-high heat, cook the ground sausage until browned, breaking it into small pieces.
  2. Transfer the cooked sausage to a plate, reserving 1 tablespoon of grease in the pot.
  3. Add diced onions to the pot and sauté for about five minutes until softened; then add minced garlic and sauté for an additional minute.
  4. Add diced potatoes and chicken stock, bringing everything to a simmer.
  5. Reduce heat to medium-low and simmer for about ten minutes until potatoes are tender.
