  • 1 (14-16 pound) whole turkey
  • Salt and pepper (to taste)
  • 1 cup unsalted butter (softened)
  • 1 tablespoon fresh sage (chopped)
  • 1 tablespoon fresh thyme (chopped)
  • 1 tablespoon fresh rosemary (chopped)
  • 4 cloves garlic (minced)
  • 1 lemon (halved)

Instructions

  1. Remove the turkey from the refrigerator an hour before roasting to allow it to warm up.
  2. In a bowl, mix softened butter with chopped sage, thyme, rosemary, minced garlic, salt, and pepper until well combined.
  3. Preheat your oven to 450°F; adjust one rack to the bottom third.
  4. Pat the turkey dry and season generously with salt and pepper inside and out. Stuff the cavity with lemon halves and additional herbs.
  5. Rub the herb butter mixture all over the turkey.
  6. Place the turkey breast-side up on a rack in a roasting pan. Immediately reduce oven temperature to 350°F and roast for about 13 minutes per pound or until an internal temperature of 165°F is reached.
  7. Allow the turkey to rest for at least 20 minutes before carving.
